Conform statisticilor, \u00een 2021 au fost produse 236 mii tone de ciuperci champignon, cu 16% mai mult dec\u00e2t \u00een 2017. Aceast\u0103 afacere atrage antreprenorii prin rentabilitatea sa, care poate ajunge la 80-100%, \u0219i posibilitatea de a \u00eencepe cu investi\u021bii relativ mici.   <\/p>\n\n<p>\u00cen acest articol vom examina particularit\u0103\u021bile \u0219i tehnologiile de cultivare a celor mai populare ciuperci din Ucraina &#8211; hribi, champignon \u0219i pleurotus. Vom oferi informa\u021bii despre condi\u021biile necesare, echipamente, substraturi, \u0219i vom analiza componenta de business: costuri, canale de distribu\u021bie \u0219i profit poten\u021bial. <\/p>\n\n<h2 class=\"wp-block-heading\">Cultivarea hribilor \u00een Ucraina<\/h2>\n\n<p>Hribul sau m\u0103n\u0103tarca este una dintre cele mai valoroase \u0219i gustoase ciuperci. Cultivarea sa are particularit\u0103\u021bile sale, deoarece tr\u0103ie\u0219te \u00een simbioz\u0103 cu copacii \u0219i necesit\u0103 condi\u021bii forestiere. <\/p>\n\n<h3 class=\"wp-block-heading\">Tehnologia de cultivare a hribilor<\/h3>\n\n<p>Hribii se \u00eenmul\u021besc prin spori sau miceliu. Tehnologia de cultivare a hribilor \u00een condi\u021bii de laborator include utilizarea culturilor mam\u0103, care sunt sem\u0103nate pe un mediu nutritiv steril cu agar-agar \u0219i decoct de scoar\u021b\u0103 de stejar. Dup\u0103 20-30 de zile de incuba\u021bie, miceliul este transplantat \u00eentr-un substrat pe baz\u0103 de cereale (gr\u00e2u, secar\u0103, mei) \u0219i cultivat \u00eenc\u0103 14-30 de zile la temperatura de 18-22\u00b0C.  <\/p>\n\n<p>Miceliul de cereale ob\u021binut este folosit pentru plantare \u00een sol prim\u0103vara sau toamna. Norma de \u00eens\u0103m\u00e2n\u021bare este de 100-200 g\/m\u00b2. \u00cenainte de \u00eens\u0103m\u00e2n\u021bare, miceliul este amestecat cu turb\u0103 sau compost pentru o mai bun\u0103 distribu\u021bie \u00een sol.  <\/p>\n\n<p>Miceliul se planteaz\u0103 \u00een brazde sau g\u0103uri cu ad\u00e2ncimea de 5-10 cm la o distan\u021b\u0103 de 20-30 cm \u00eentre r\u00e2nduri. Dup\u0103 plantare, solul se mulce\u0219te cu rumegu\u0219, paie sau pleav\u0103 pentru a men\u021bine umiditatea. \u00cen timpul vegeta\u021biei, planta\u021bia se ud\u0103, men\u021bin\u00e2nd umiditatea substratului la 60-70%. \u00cen perioada cald\u0103, udarea se face zilnic, \u00een perioada r\u0103coroas\u0103 &#8211; de 2-3 ori pe s\u0103pt\u0103m\u00e2n\u0103.   <\/p>\n\n<p>Pentru a stimula cre\u0219terea miceliului, prim\u0103vara \u0219i toamna se fac fertiliz\u0103ri cu \u00eengr\u0103\u0219\u0103minte organice sau minerale. S-au dovedit eficiente gunoiul de pas\u0103re, b\u0103legarul, compostul, precum \u0219i \u00eengr\u0103\u0219\u0103mintele complexe pentru ciuperci cu microelemente. Norma de aplicare este de 50-100 g\/m\u00b2.  <\/p>\n\n<p>Recolta de hribi apare dup\u0103 2-3 ani de la plantarea miceliului. Corpurile fructifere se culeg selectiv pe m\u0103sura maturiz\u0103rii, r\u0103sucindu-le cu grij\u0103 din sol. \u00cen func\u021bie de condi\u021biile meteorologice, recolta se culege de 2-3 ori pe s\u0103pt\u0103m\u00e2n\u0103 timp de 1,5-2 luni. Productivitatea planta\u021biei de hribi este de 50-200 kg la hectar.   <\/p>\n\n<p>Pentru a prelungi fructificarea \u00een anul urm\u0103tor, toamna planta\u021bia se acoper\u0103 cu un strat de frunze sau ace de pin de 10-20 cm grosime. Prim\u0103vara, acoperirea se \u00eendep\u0103rteaz\u0103, solul se af\u00e2neaz\u0103 \u0219i se aplic\u0103 \u00eengr\u0103\u0219\u0103minte. Recoltarea ciupercilor manual sau cu combine. <\/li>\n<\/ol>\n\n<p>Ciupercile champignon se \u021bin \u00een spa\u021bii \u00eenchise sau sere pe rafturi (tehnologia olandez\u0103 de cultivare a ciupercilor) sau \u00een saci \u0219i containere (metoda intensiv\u0103).<\/p>\n\n<h3 class=\"wp-block-heading\">Condi\u021bii \u0219i echipamente necesare pentru cultivarea ciupercilor champignon<\/h3>\n\n<p>Condi\u021bii cheie pentru cultivarea cu succes a ciupercilor champignon:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>temperatura aerului 14-18\u00b0C \u00een stadiul de fructificare;<\/li>\n\n\n\n<li>umiditatea 80-85% pe tot parcursul ciclului;<\/li>\n\n\n\n<li>ventila\u021bie \u0219i circula\u021bia aerului pentru eliminarea CO2;<\/li>\n\n\n\n<li>iluminare cu l\u0103mpi LED sau fluorescente 8-12 ore pe zi.<\/li>\n<\/ul>\n\n<p>Set minim de echipamente pentru cultivarea ciupercilor champignon:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>rafturi, saci sau containere pentru substrat;<\/li>\n\n\n\n<li>sistem de irigare, irigare prin picurare sau cea\u021b\u0103;<\/li>\n\n\n\n<li>senzori de umiditate, temperatur\u0103, nivel CO2;<\/li>\n\n\n\n<li>camer\u0103 frigorific\u0103 pentru p\u0103strarea recoltei;<\/li>\n\n\n\n<li>mas\u0103 de sortare, c\u00e2ntare, inventar pentru ambalare;<\/li>\n\n\n\n<li>camer\u0103 de pasteurizare a compostului cu volum de 5-50 m\u00b3;<\/li>\n\n\n\n<li>generator de abur pentru pasteurizare cu capacitate de 100-500 kg abur\/or\u0103;<\/li>\n\n\n\n<li>camere cu microclimat controlat cu suprafa\u021b\u0103 de 100-1000 m\u00b2;<\/li>\n\n\n\n<li>sistem de ventila\u021bie \u0219i climatizare cu productivitate de 5000-50000 m\u00b3\/or\u0103;<\/li>\n\n\n\n<li>sistem de \u00eenc\u0103lzire a camerelor (cu ap\u0103, abur, electric);<\/li>\n\n\n\n<li>central\u0103 termic\u0103 sau CET pentru \u00eenc\u0103lzire \u0219i pasteurizare;<\/li>\n\n\n\n<li>camere frigorifice pentru p\u0103strarea produselor finite cu volum de 5-50 m\u00b3;<\/li>\n\n\n\n<li>sistem automatizat de control al microclimatului cu computer \u0219i software;<\/li>\n\n\n\n<li>laborator pentru controlul calit\u0103\u021bii miceliului \u0219i substratului.<\/li>\n<\/ul>\n\n<p>Conform tehnologiei de cultivare a ciupercilor champignon, suprafa\u021ba total\u0103 a unui complex cu capacitate de 10 t\/lun\u0103 este de 0,5-1 ha. Popularitatea sa se explic\u0103 prin preten\u021biile reduse fa\u021b\u0103 de condi\u021bii, fructificarea rapid\u0103 \u0219i propriet\u0103\u021bile gustative bune. <\/p>\n\n<h3 class=\"wp-block-heading\">Tehnologia de cultivare a ciupercilor pleurotus<\/h3>\n\n<p>Cultivarea pleurotus presupune alegerea \u00eentre metodele extensive \u0219i intensive:<\/p>\n\n<ol class=\"wp-block-list\">\n<li>Metoda extensiv\u0103 necesit\u0103 tratarea cu miceliu a cioatelor sau trunchiurilor de foioase cu ob\u021binerea ulterioar\u0103 a recoltei \u00een condi\u021bii naturale timp de 3-4 ani. Metoda este pu\u021bin productiv\u0103. <\/li>\n\n\n\n<li>\u00cen metoda intensiv\u0103 de cultivare a pleurotus se folose\u0219te substrat de paie \u00een saci sau blocuri, miceliul se dezvolt\u0103 \u00een condi\u021bii controlate \u0219i recolta se ob\u021bine deja dup\u0103 1,5-2 luni.<\/li>\n<\/ol>\n\n<p>Tehnologia intensiv\u0103 de cultivare a ciupercilor pleurotus const\u0103 din urm\u0103toarele etape:<\/p>\n\n<ol class=\"wp-block-list\">\n<li>Preg\u0103tirea, pasteurizarea substratului (paie).<\/li>\n\n\n\n<li>Inocularea bazei cu miceliu \u00een saci sau blocuri.<\/li>\n\n\n\n<li>Incubarea miceliului timp de 2-3 s\u0103pt\u0103m\u00e2ni la 22-24\u00b0C.<\/li>\n\n\n\n<li>Ini\u021bierea fructific\u0103rii prin sc\u0103derea temperaturii la 12-16\u00b0C.<\/li>\n\n\n\n<li>Recoltarea timp de 30-40 zile \u00een 3-4 valuri.<\/li>\n<\/ol>\n\n<p>Durata total\u0103 a ciclului este de 40-60 zile. \u00centr-un an se pot face 5-6 itera\u021bii. \u00cen condi\u021bii industriale, ciclurile se desf\u0103\u0219oar\u0103 continuu cu un interval de 14-20 zile \u00eentre introducerea noilor blocuri \u00een camer\u0103.  <\/p>\n\n<p>Substratul uzat poate fi folosit pentru producerea biogazului, ca \u00eengr\u0103\u0219\u0103m\u00e2nt organic sau pentru vermicompostare. Spa\u021biile \u0219i echipamentele sunt sp\u0103late \u0219i dezinfectate minu\u021bios dup\u0103 fiecare ciclu. <\/p>\n\n<h3 class=\"wp-block-heading\">Condi\u021bii \u0219i echipamente necesare pentru cultivarea pleurotus<\/h3>\n\n<p>Condi\u021biile tehnice pentru cultivarea pleurotus sunt mai pu\u021bin preten\u021bioase dec\u00e2t la champignon:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>temperatura optim\u0103 de fructificare &#8211; 12-18\u00b0C;<\/li>\n\n\n\n<li>umiditatea aerului &#8211; 80-85%, la incubare &#8211; p\u00e2n\u0103 la 60-65%;<\/li>\n\n\n\n<li>necesit\u0103 aerisire regulat\u0103, iluminare cu lumin\u0103 difuz\u0103.<\/li>\n<\/ul>\n\n<p>Pentru cultivarea ciupercilor \u00een Ucraina sunt potrivite hangarele, pivni\u021bele, serele, depozitele de legume. Echipamente necesare: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>camere de pasteurizare a substratului cu volum p\u00e2n\u0103 la 1 m\u00b3;<\/li>\n\n\n\n<li>rafturi, poli\u021be sau l\u0103zi pentru amplasarea blocurilor;<\/li>\n\n\n\n<li>umidificatoare, \u00eenc\u0103lzitoare de aer;<\/li>\n\n\n\n<li>ventilatoare de extrac\u021bie, iluminare.<\/li>\n<\/ul>\n\n<p>\u00cen lucrul cu pleurotus se acord\u0103 o aten\u021bie deosebit\u0103 prevenirii contamin\u0103rii substratului \u0219i spa\u021biului cu ciuperci de mucegai \u0219i bacterii concurente. De aceea, toate opera\u021biunile cu baza \u0219i miceliul se efectueaz\u0103 \u00een condi\u021bii sterile, folosind echipament special curat, m\u0103\u0219ti, m\u0103nu\u0219i. Spa\u021biile\/inventarul sunt sp\u0103late \u0219i dezinfectate regulat.  <\/p>\n\n<p>Cea mai complex\u0103 etap\u0103 \u00een produc\u021bia de pleurotus este preg\u0103tirea miceliului de cereale pentru \u00eens\u0103m\u00e2n\u021bare. Acesta se ob\u021bine \u00een condi\u021bii de laborator din cultura pur\u0103 pe substrat steril (mei, orz, secar\u0103). Pentru a preveni degenerarea plantelor, miceliul de pleurotus este periodic re\u00eennoit din cultura mam\u0103 sau cump\u0103rat de la companii specializate.  <\/p>\n\n<h2 class=\"wp-block-heading\">Plan de afaceri pentru cultivarea ciupercilor<\/h2>\n\n<p>Cultivarea ciupercilor ca afacere necesit\u0103 elaborarea prealabil\u0103 a unui plan detaliat.
