Industria este orientat\u0103 spre satisfacerea nevoilor consumatorilor \u00een produse cu valoare nutritiv\u0103 \u00eenalt\u0103, utile \u0219i sigure, care devin o surs\u0103 de proteine, gr\u0103simi, carbohidra\u021bi, vitamine \u0219i minerale. <\/p>\n\n<p>\u00cen acest articol, vom examina \u00een detaliu aspectele cheie ale tehnologiei de produc\u021bie a laptelui \u0219i gama de produse lactate din Ucraina, vom analiza starea actual\u0103 a industriei \u0219i vom contura perspectivele dezvolt\u0103rii acesteia.<\/p>\n\n<h2 class=\"wp-block-heading\">Tehnologia de produc\u021bie a laptelui de b\u0103ut<\/h2>\n\n<p>Produc\u021bia de lapte \u00een Ucraina este un proces tehnologic complex care include o serie de opera\u021bii consecutive pentru ob\u021binerea unui produs sigur, de calitate \u0219i nutritiv. \u00cencepe cu recep\u021bia laptelui-materie prim\u0103 \u0219i controlul atent al calit\u0103\u021bii conform cerin\u021belor DSTU 3662:2015. <\/p>\n\n<p>Laptele trece prin prelucrarea primar\u0103: cur\u0103\u021barea cu separatoare centrifugale sau filtre, r\u0103cirea la 4\u20136\u00b0C \u0219i depozitarea. Apoi are loc normalizarea dup\u0103 con\u021binutul de gr\u0103sime prin amestecarea cu sm\u00e2nt\u00e2n\u0103 sau lapte degreasat. <\/p>\n\n<p>Tehnologia de procesare a laptelui include pasteurizarea, care distruge patogenii \u0219i cre\u0219te rezisten\u021ba termic\u0103 a produsului. Regimurile: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>\u00eendelungat\u0103 la 63\u201365\u00b0C timp de 30 de minute;<\/li>\n\n\n\n<li>pe termen scurt la 76\u00b0C cu men\u021binerea timp de 15\u201320 secunde;<\/li>\n\n\n\n<li>instantanee la 85\u201395\u00b0C f\u0103r\u0103 men\u021binere.<\/li>\n<\/ul>\n\n<p>Pentru \u00eembun\u0103t\u0103\u021birea consisten\u021bei \u0219i prevenirea separ\u0103rii gr\u0103simii, laptele se omogenizeaz\u0103, m\u0103run\u021bind globulele de gr\u0103sime la o dimensiune mai mic\u0103 de 1 \u03bcm sub presiune \u00eenalt\u0103 (10\u201325 MPa).<\/p>\n\n<p>Laptele gata se toarn\u0103 \u00een recipiente (sticle, pachete, ambalaje aseptice), se marcheaz\u0103, se r\u0103ce\u0219te \u0219i se p\u0103streaz\u0103 la 4\u00b12\u00b0C. Gama include lapte pasteurizat, pr\u0103jit, ultrapasteurizat \u0219i sterilizat cu con\u021binut de gr\u0103sime de la 1% la 6%. <\/p>\n\n<h2 class=\"wp-block-heading\">Tehnologia de produc\u021bie a produselor lactate<\/h2>\n\n<p>Ucraina are un poten\u021bial puternic \u00een produc\u021bia diversificat\u0103 de produse lactate \u2014 pentru acestea exist\u0103 o cerere mare at\u00e2t pe pie\u021bele interne, c\u00e2t \u0219i pe cele externe. S\u0103 analiz\u0103m particularit\u0103\u021bile tehnologiei de fabricare a grupurilor cheie de produse lactate. <\/p>\n\n<h3 class=\"wp-block-heading\">Tehnologia de produc\u021bie a laptelui praf<\/h3>\n\n<p>Laptele praf este un produs pulverulent foarte concentrat de lung\u0103 durat\u0103, ob\u021binut prin condensarea \u0219i uscarea laptelui pasteurizat. \u00cen func\u021bie de partea masic\u0103 a gr\u0103simii, se deosebe\u0219te laptele praf \u00eentreg (20\u201325% gr\u0103sime) \u0219i laptele praf degreasat (nu mai mult de 1,5% gr\u0103sime). <\/p>\n\n<p>Tehnologia de fabricare a laptelui praf este similar\u0103 cu crearea laptelui obi\u0219nuit de b\u0103ut. S\u0103 analiz\u0103m momentele principale: <\/p>\n\n<ol class=\"wp-block-list\">\n<li>Pasteurizarea amestecului de lapte la temperatura de 90\u201395\u00b0C f\u0103r\u0103 men\u021binere sau \u00een dou\u0103 trepte la 85\u201387\u00b0C cu men\u021binerea 5\u201310 min \u0219i la 120\u2013130\u00b0C f\u0103r\u0103 men\u021binere.<\/li>\n\n\n\n<li>Condensarea \u00een aparate de evaporare \u00een vid de tip pelicul\u0103 p\u00e2n\u0103 la con\u021binutul de substan\u021be uscate de 42\u201352%.<\/li>\n\n\n\n<li>Omogenizarea la temperatura de 55\u201360\u00b0C \u0219i presiunea de 10\u201315 MPa pentru prevenirea form\u0103rii gr\u0103simii libere \u00een produsul gata.<\/li>\n\n\n\n<li>Uscarea pe instala\u021bii de uscare prin pulverizare sau cu val\u021buri cu aer cald (150\u2013180\u00b0C la intrare \u0219i 65\u201395\u00b0C la ie\u0219irea din turnul de uscare) p\u00e2n\u0103 la umiditatea final\u0103 de 2\u20137%.<\/li>\n<\/ol>\n\n<p>Apoi se realizeaz\u0103 r\u0103cirea la temperatura nu mai mare de 20\u00b0C. Apoi produsul se cerne \u0219i se ambaleaz\u0103 \u00een saci de h\u00e2rtie cu 4\u20135 straturi cu inser\u021bii de polietilen\u0103 cu greutatea de 20\u201330 kg. Se permite depozitarea la temperatura nu mai mare de 10\u00b0C \u0219i umiditatea relativ\u0103 a aerului nu mai mare de 85% timp de 8 luni.  <\/p>\n\n<h3 class=\"wp-block-heading\">Tehnologia de produc\u021bie a laptelui condensat<\/h3>\n\n<p>Laptele condensat este un produs lactat concentrat ob\u021binut prin \u00eendep\u0103rtarea par\u021bial\u0103 a apei din laptele \u00eentreg \u0219i ad\u0103ugarea zah\u0103rului (zaharoz\u0103) pentru cre\u0219terea presiunii osmotice \u0219i prelungirea termenului de p\u0103strare. Partea masic\u0103 a substan\u021belor uscate \u00een laptele condensat este de 73,5\u201374,2%, din care aproximativ 44% revine zaharozei. <\/p>\n\n<p>Dup\u0103 pasteurizarea amestecului normalizat urmeaz\u0103 urm\u0103toarele etape:<\/p>\n\n<ol class=\"wp-block-list\">\n<li>Ad\u0103ugarea zah\u0103rului sub forma de sirop de zah\u0103r (60\u201370% substan\u021be uscate). Acesta se prepar\u0103 prin dizolvarea zah\u0103rului granulat \u00een lapte pasteurizat, \u00eenc\u0103lzirea siropului ob\u021binut la 95\u201399\u00b0C \u0219i filtrarea. <\/li>\n\n\n\n<li>Condensarea amestecului de lapte cu zah\u0103r \u00een aparate de evaporare \u00een vid la temperatura de 50\u201360\u00b0C p\u00e2n\u0103 la con\u021binutul de substan\u021be uscate de 73,5\u201374,2%.<\/li>\n\n\n\n<li>R\u0103cirea laptelui condensat la temperatura de 20\u00b0C \u00een cristalizatoare timp de 20\u201325 de minute \u00een condi\u021bii de vid \u0219i amestecare continu\u0103 pentru distribuirea uniform\u0103 a cristalelor de lactoz\u0103 \u0219i prevenirea m\u0103rirea acestora.<\/li>\n\n\n\n<li>Ambalarea produsului gata \u00een conserve din tabl\u0103 cu termene de p\u0103strare p\u00e2n\u0103 la 12 luni. \u00cen pahare de polimeri, laptele condensat poate fi p\u0103strat nu mai mult de 3 luni. <\/li>\n<\/ol>\n\n<p>\u00cen 2023, <a href=\"https:\/\/investincherkasyregion.gov.ua\/en\/news\/ukraine-has-increased-export-dairy-products-august-reduced-shipments-condensed-milk-and-ice\">exportul produsului din Ucraina a fost de 2,64 mii t<\/a>, cu 14% mai pu\u021bin comparativ cu iulie aceluia\u0219i an. Principalele pie\u021be de desfacere a laptelui condensat au fost \u021b\u0103rile UE \u0219i Moldova. Cererea intern\u0103 r\u0103m\u00e2ne de asemenea stabil\u0103.  <\/p>\n\n<p><em>Citi\u021bi de asemenea: <\/em><a href=\"https:\/\/weagro.ua\/blog\/fermerske-gospodarstvo-shho-cze-vydy-yak-nazvaty-ta-zareyestruvaty\/\"><em>Gospod\u0103ria fermierului: ce este, tipuri, cum s\u0103 o numi\u021bi \u0219i s\u0103 o \u00eenregistra\u021bi<\/em><\/a><\/p>\n\n<h2 class=\"wp-block-heading\">Tehnologia de produc\u021bie a produselor lactate fermentate<\/h2>\n\n<p>La baza tehnologiei generale de produc\u021bie a produselor lactate fermentate st\u0103 procesul de fermentare a laptelui cu culturi pure de bacterii care fermenteaz\u0103 lactoza cu formarea acidului \u0219i altor compu\u0219i care formeaz\u0103 gustul, aroma \u0219i consisten\u021ba specific\u0103. S\u0103 analiz\u0103m particularit\u0103\u021bile tehnologiei de fabricare a produselor lactate fermentate de tipurile cele mai populare. <\/p>\n\n<h3 class=\"wp-block-heading\">Chefir<\/h3>\n\n<p>Chefirul este o b\u0103utur\u0103 de fermentare mixt\u0103 lactic\u0103 \u0219i alcoolic\u0103, fabricat\u0103 prin acidularea laptelui cu ferment simbiotic de chefir pe baza ciupercilor. Tehnologia de produc\u021bie a chefirului include: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>r\u0103cirea laptelui la temperatura de acidulare 20\u201325\u00b0C \u0219i introducerea a 1\u20133% ferment de chefir sau ciuperci;<\/li>\n\n\n\n<li>acidularea timp de 10\u201312 ore p\u00e2n\u0103 la formarea cheagului cu aciditatea de 85\u2013100\u00b0T;<\/li>\n\n\n\n<li>amestecarea, r\u0103cirea la 10\u201312\u00b0C \u0219i maturarea timp de 10\u201312 ore cu amestecare periodic\u0103;<\/li>\n\n\n\n<li>turnarea chefirului gata \u00een ambalaje pentru consumatori, marcarea \u0219i p\u0103strarea la 4\u20136\u00b0C nu mai mult de 36 de ore.<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\">Sm\u00e2nt\u00e2n\u0103<\/h3>\n\n<p>Sm\u00e2nt\u00e2na se produce prin acidularea cremei pasteurizate cu partea masic\u0103 a gr\u0103simii de 10\u201330% cu ferment din culturi pure de bacterii lactice. Metoda de produc\u021bie a sm\u00e2nt\u00e2nii include urm\u0103toarele etape: <\/p>\n\n<ol class=\"wp-block-list\">\n<li>Omogenizarea la temperatura de 55\u201360\u00b0C \u0219i presiunea de 10\u201315 MPa pentru prevenirea separ\u0103rii gr\u0103simii.<\/li>\n\n\n\n<li>R\u0103cirea la temperatura de acidulare 20\u201325\u00b0C \u0219i introducerea a 0,5\u20135% ferment de streptococi lactici mezofile.<\/li>\n\n\n\n<li>Acidularea timp de 10\u201312 ore p\u00e2n\u0103 la formarea cheagului cu aciditatea de 60\u201375\u00b0T.<\/li>\n\n\n\n<li>Amestecarea, r\u0103cirea la 5\u20138\u00b0C \u0219i maturarea timp de 6\u201312 ore pentru formarea consisten\u021bei dense.<\/li>\n<\/ol>\n\n<h3 class=\"wp-block-heading\">Iaurt<\/h3>\n\n<p>Iaurtul se ob\u021bine prin acidularea laptelui pasteurizat normalizat cu culturi termofile de bacterii lactice Streptococcus thermophilus \u0219i Lactobacillus bulgaricus. Procesul de produc\u021bie al iaurtului const\u0103 din urm\u0103toarele etape: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>introducerea a 1\u20135% ferment bacterian \u0219i incubarea timp de 4\u20136 ore p\u00e2n\u0103 la formarea cheagului dens cu aciditatea de 75\u2013140\u00b0C;<\/li>\n\n\n\n<li>amestecarea cheagului, r\u0103cirea la 20\u00b0C, ad\u0103ugarea ingredientelor aromate (fructe, fructe de p\u0103dure, siropuri).<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\">Br\u00e2nz\u0103<\/h3>\n\n<p>Br\u00e2nza se fabric\u0103 prin coagularea acid\u0103 sau acid-cheag a proteinelor laptelui pasteurizat normalizat sau degreasat cu \u00eendep\u0103rtarea ulterioar\u0103 a zerului \u0219i presarea cheagului. Algoritmul de produc\u021bie a br\u00e2nzei: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>acidularea laptelui cu ferment bacterian de streptococi lactici mezofile sau amestecul acestora cu bacilul acidofil la temperatura de 28\u201332\u00b0C timp de 6\u20138 ore p\u00e2n\u0103 la formarea cheagului cu aciditatea de 58\u201365\u00b0C pentru br\u00e2nza slab\u0103 \u0219i 65\u201375\u00b0C pentru br\u00e2nza gras\u0103;<\/li>\n\n\n\n<li>t\u0103ierea cheagului \u00een cuburi, \u00eenc\u0103lzirea la 36\u201355\u00b0C pentru accelerarea elimin\u0103rii zerului, autopresarea \u0219i presarea;<\/li>\n\n\n\n<li>r\u0103cirea br\u00e2nzei la temperatura nu mai mare de 8\u00b0C.<\/li>\n<\/ul>\n\n<h2 class=\"wp-block-heading\">Tehnologia de produc\u021bie a br\u00e2nzeturilor tari<\/h2>\n\n<p>Produc\u021bia de br\u00e2nzeturi tari \u00een Ucraina \u00een <a href=\"https:\/\/www.dairyglobal.net\/industry-and-markets\/market-trends\/ukrainian-dairy-industry-shows-resilience\/\">2023 a fost de aproximativ 89 de mii de tone<\/a>, mai pu\u021bin comparativ cu anul precedent (106,5 mii de tone). Exportul de br\u00e2nzeturi tari s-a m\u0103rit cu 22%, <a href=\"https:\/\/dairynews.today\/global\/news\/ukraine-records-significant-surge-in-dairy-exports-and-revenue-in-october-2023.html\">ajung\u00e2nd la 984 de tone<\/a>, iar principalele pie\u021be de desfacere au fost Kazahstanul \u0219i Moldova. <\/p>\n\n<p>Cheddar, Yaroslavski, Olandez\u0103 apar\u021bin sorturilor tari. Tehnologia de produc\u021bie a br\u00e2nzei prevede temperatura sc\u0103zut\u0103 a celei de-a doua \u00eenc\u0103lziri. Aceasta include urm\u0103toarele opera\u021bii:  <\/p>\n\n<ol class=\"wp-block-list\">\n<li>Preg\u0103tirea laptelui pentru cheagare: introducerea fermentului bacterian de streptococi lactici mezofile (0,7\u20131,2% pentru Yaroslavski, 1,5\u20132,0% pentru Cheddar), solu\u021bia de clorur\u0103 de calciu (solu\u021bie apoas\u0103 de 40% \u00een cantitate de 10\u201340 g la 100 kg de lapte) pentru restabilirea echilibrului salin, enzima de cheagare a laptelui.<\/li>\n\n\n\n<li>Formarea cheagului la temperatura de 32\u201334\u00b0C timp de 30\u201340 de minute, t\u0103ierea cheagului de br\u00e2nz\u0103, punerea boabelor \u0219i \u00eendep\u0103rtarea par\u021bial\u0103 a zerului (30%).<\/li>\n\n\n\n<li>A doua \u00eenc\u0103lzire a masei de br\u00e2nz\u0103 la temperatura de 39\u201341\u00b0C timp de 15\u201330 de minute pentru reglarea dezvolt\u0103rii procesului lactic \u0219i deshidratarea boabelor p\u00e2n\u0103 la nivelul necesar de umiditate.<\/li>\n\n\n\n<li>Formarea \u0219i presarea timp de 1,5\u20134 ore pentru \u00eendep\u0103rtarea final\u0103 a zerului \u0219i ob\u021binerea br\u00e2nzei cu o form\u0103 \u0219i dimensiune anumite.<\/li>\n\n\n\n<li>S\u0103rarea \u00een saramur\u0103 cu concentra\u021bia de 18\u201322% la temperatura de 8\u201312\u00b0C timp de 2\u20135 zile, \u00een func\u021bie de dimensiunea capului de br\u00e2nz\u0103.<\/li>\n\n\n\n<li>Maturarea la anumite regime de temperatur\u0103 (10\u201312\u00b0C \u2014 prima etap\u0103, 14\u201316\u00b0C \u2014 a doua) \u0219i umiditate relativ\u0103 (80\u201390%) de la 30 la 60 de zile, \u00een func\u021bie de tipul de br\u00e2nz\u0103.<\/li>\n\n\n\n<li>Parafinarea sau ambalarea br\u00e2nzei \u00een materiale polimerice, marcarea \u0219i p\u0103strarea la temperatura de la 1 la 8\u00b0C \u0219i umiditatea relativ\u0103 de 80\u201385%.<\/li>\n<\/ol>\n\n<p>Br\u00e2nzeturile tari trebuie s\u0103 corespund\u0103 cerin\u021belor de siguran\u021b\u0103 pentru con\u021binutul de elemente toxice, micotoxine, pesticide, antibiotice, radionuclide.<\/p>\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"585\" data-src=\"http:\/\/weagro.ua\/wp-content\/uploads\/2024\/09\/2-13-1024x585.webp\" alt=\"Tehnologia de produc&#x21B;ie a br&#xE2;nzeturilor tari\" class=\"wp-image-1280 lazyload\" title=\"Tehnologia de produc&#x21B;ie a br&#xE2;nzeturilor tari - fotografia 2\" data-srcset=\"https:\/\/weagro.ua\/wp-content\/uploads\/2024\/09\/2-13-1024x585.webp 1024w,  https:\/\/weagro.ua\/wp-content\/uploads\/2024\/09\/2-13-300x171.webp 300w,  https:\/\/weagro.ua\/wp-content\/uploads\/2024\/09\/2-13-768x439.webp 768w,  https:\/\/weagro.ua\/wp-content\/uploads\/2024\/09\/2-13-1536x878.webp 1536w,  https:\/\/weagro.ua\/wp-content\/uploads\/2024\/09\/2-13.webp 1792w\" data-sizes=\"(max-width: 1024px) 100vw, 1024px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 1024px; --smush-placeholder-aspect-ratio: 1024\/585;\" \/><\/figure>\n\n<h2 class=\"wp-block-heading\">Tehnologia de produc\u021bie a \u00eenghe\u021batei<\/h2>\n\n<p>\u00cen 2023, exportul de \u00eenghe\u021bat\u0103 din Ucraina a fost de <a href=\"http:\/\/milkua.info\/en\/post\/ukraine-increased-the-export-of-dairy-products-in-may\">1,43 mii tone, cu 62,78% mai mult comparativ cu aprilie aceluia\u0219i an<\/a>. Principalele pie\u021be de desfacere a \u00eenghe\u021batei au fost \u021b\u0103rile UE \u0219i Moldova. Cererea intern\u0103 r\u0103m\u00e2ne de asemenea ridicat\u0103.  <\/p>\n\n<p>\u00cenghe\u021bata este un desert dulce b\u0103tut \u0219i \u00eenghe\u021bat, fabricat din produse lactate \u0219i ingrediente. Procesul tehnologic de produc\u021bie a \u00eenghe\u021batei \u00een Ucraina const\u0103 din urm\u0103toarele opera\u021bii: <\/p>\n\n<ol class=\"wp-block-list\">\n<li>Compunerea amestecului conform re\u021betei pentru ob\u021binerea produsului cu compozi\u021bia chimic\u0103 \u0219i propriet\u0103\u021bile necesare.
